Meet the Chef
It all started with a dream. Years ago, when I still lived in Ukraine, I got an inspiration to open my own little cozy cafe - a place where anyone can come and delight themselves with a cup of tea or coffee with some of my creations. I’ve always loved baking and cooking and aspired to making it beautiful and artistic.
One day as I was looking to decorate a cake I was making, I stumbled upon zephyr flowers - I knew this was the perfect thing for me to learn how to make. Everything about it was just right - the taste, the look, the challenge! Now, I do what I love most - sculpt desserts and help people bring smiles to their loved ones.

Chances are, you haven’t heard of zephyr - this dessert comes from Eastern Europe, and my particular recipe comes from Ukraine.
Zephyr is a one-of-a-kind dessert. It is airy, light, not too sweet, and tastes like fresh berries. Back in my country, this is a go-to treat that many dietitians recommend.
Locally, the closest thing to zephyr is a marshmallow, but even that doesn’t give it justice. Although it is soft, it isn’t as mushy; it is sweet but far not as sweet; and the ingredients are completely different - better yet, they’re all natural!
All my zephyr is made on apple base, so there is always a hint of apple flavor, but I often mix other fruit for more interesting combinations, and oftentimes, I will mix with berries. Because of that, the flavor is sweet and zesty, overall very pleasant and rich in taste.
